I don't think it matters how many clicks you have to be honest.
Mine failed on the MOT cos it could be pulled all the way up (took alot of force to do it and normally 3/4 was enough to apply the brake...

Personally I don't know too much about the clutch. I would assume that the clutch would have springs and also the pedal would have a spring.

yeah, put a plate in first and you should be fine for a wing or wiper.
