its best for the ecu to kow the temp of the air going into the engine.
get the sensor back in, but for now, your ok

your probably running really rich like speedtoe said.
lean out the SAFC, the ecu still thinks that the enjectors are at factory size, so it opens them at the same pulse.

it is either the gauge in the dash, or the water temp sensor on the engine.
could also be a short in the wiring, but more than likely i would say its the water temp sensor.
