I'm not sure how the dimmer circuit works, but if it is directly linked to the +12v to all the lights, then there should be no problem if it's not "sending" enough voltage, too low volts won't kill LE...

LEDs take fine to voltage changes, provided it's within their range. Are you overvolting them? Some LEDs have an operating range of 1.7-2.5v (generally Red) and some take up to 3-4v (generally Blue)...
