Don't order one for a 94.
Order one from a 95.
I suspect they are giving you 5th gen (93) axles.
I also wouldn't rule out the fact that many after market axles I've had have been terrible.

How many headers ?
Answer - only one. You would buy a header.
Not really a performance gain, maybe a 2-3 hp.
Makes the bay looks better and they do change the sound of the engine.
I wouldn't pay more ...

ST front mount works just fine in a GT.
Have you thought about poly inserts instead of new mounts ?
You don't need new mounts for them, you can use your old cracked ones.
They make a huge difference.

Don't undo the rack.
Remove the front to back crossmember then drop the subframe about 2", that makes it very easy.
You don't have to remove the crossmember, but it makes it easier overall IMO because...
