The GT caliper will not fit on the ST torque plate. You will also need the GT torque plate, along with the GT pads, rotors.

I'm confused batman. Torque plate is a pretty generic term which can mean any piece of metal that covers something and is sandwiched between two other things. I figure when you say torque plate, you mean it as the backing plate between the spindle and axle. If i'm incorrect... well... oops.
Anyway, it'll still work just fine. The ST does have smaller backing plates, but that doesn't mean you can't bend them back a bit to clear the rotors. The GT rotors aren't sooo big that they extend past the plates... The calipers are bolt-ons on the spindle, which is the same between the GT and ST. I am kinda running GT calipers myself (basically calipers/rotors/pads) and they were bolt-ons... so I think you may be misunderstanding a bit.
