Well you are going to need to power it somehow... easiest would be an inverter, but sometimes they introduce noise into your system, and the power than comes out of them is not so great (most are square-wave instead of a true sine-wave) but should be good enough for a video game console.
Next you need to get video to your monitor and audio to your HU or amplifier via RCA cables. If your double din has RCA inputs it can be done easily.

So do i have to have the consol hooked up to my amp as well? or would i simply be able to wire it to the double din HU using rcas and the audio would play through my speakers, subs etc.? do you know where i can get one of these inverters or how much they cost?

If your HU has audio inputs connect it to them and it will play through your speakers/subs. You can get inverters anywhere, wal-mart, best buy, eBay, etc. You can probably get a cheap one for $20 or so from eBay. Look at your console's power adapter and look at the wattage to decide what inverter to buy.
