I am about to buy rims and i was wondering what offset i should go with. the wheels i was looking at are 18X7.5 and i wanted to know what offset would keep the wheel from sticking out the rest of my car? the tires are gonna be 215/35R18

i would say go with 35mm cuz i believe 38mm is stock (someone please verify that number)

38 is stock. The lower the number the more the rims will stick out from the wheel well.
But remember that stock the wheels are waaaay in the fenders. I'm running 6.5" wide wheels with a 38mm offset and 25mm spacers. So the offset is effectively 13mm. If those are your only two options, I would go with the 35mm. They're not even going to be close to sticking out even tho they're 7.5" wide.
i have 18x7.5 with a 35 offset. they dont stick out, line up perfectly: but you will have a problem with rubbing if you get a larger size tire and are lowred. the tire size you intend to go with is fine. I'm about to drop down to that size myself actually.

use 43 - 45 offset that should do just fine.

so, offset is the thickness of the rim at the poin where the lugs get put on?
my current rims are 40 offset and im trying to see what kind of spacers i could get for them. if i get 5mm spacers then my offset would change to 35mm, right? is that the maximum offset i can have, and still have enough of the bolt left to make sure the nuts are on safely? i know i can get larger spacers that come with their own bolts, but i feel a little uneasy about something that i have bolt on to my car, and then the wheel bolts on to that.
