30 seconds is the very minimum I let my engine run before taking off. I like to let it warm up for a few minutes in the winter. The oil gets thick when it gets cold and doesn't circulate around the engine as well, so you never want to run your engine right after startup when it's cold. There's a list of other reasons why it's a bad idea to start it up and go, but it's always a good idea to let the engine idle for a little bit before taking off.

Also synthetics do a better job of not thickening when cold. Being you're in Houston how bad can winter really be?
The best thing to do in extreme cold would be to use a block warmer.
