As an update for anyone else in the future that has this issue. It turns out to be a fairly large vacuum leak....
Being a non-interference engine you have nothing to really worry about, you get as many do-overs as needed....

Most likely the A/C idle up valve needs replaced, or a vacuum line has come undone. As far as the car starting without A/C on and dropping take a loo...
A/C idle up valve could be at fault, it'd be the first thing I'd check anyway....
1mz is obd2 and it is to my knowledge legal in all 50 states. As long as you get it from a vehicle made the same year or newer....
